Breakfast Burrito Recipe

Our super simple breakfast burrito is a great way to start your day! You can also add in leftover meat from the night before for an extra bit of protein.

Ingredients 

  • 1 tsp chipotle paste

  • 3 eggs

  • 1 tsp olive oil

  • 50g kale

  • 7 cherry tomatoes, halved

  • ½ avocado, sliced

  • 1 whole meal tortilla wrap

  

Method

  • Whisk the chipotle paste with the eggs and some seasoning.  

  • Heat the oil in a large frying pan, add the kale and tomatoes. 

  • Cook until the kale is wilted and the tomatoes have softened, then push everything to the side of the pan. Pour the beaten eggs into the cleared half of the pan and scramble.  

  • Layer everything into the center of your wrap, top with avocado, then wrap up and eat immediately.
